Flavours and memory go hand in hand. The process of recognising a flavour, understanding it and then reconnecting to the food you've had in your life is the most beautiful connection between flavour and memory. When this happens, the moment that the flavours hit your palate, you are taken back to your memory of the same Ingredient you have eaten before countless times. My memories are the reason I enjoy certain types of food and dislike certain others. The dishes we eat at home or have eaten when we were Young are almost always what we crave the most. Simply the aroma of a dish your mother makes is enough to remind you of home. A chilled ice cream is enough to bring back your fondest memories of school.
